Insomnia Beans with a Side of Migraine

I took the day off from work as planned. I hoped to enjoy the pleasant weather while getting lots of stuff done, but that all seems doubtful now. I had insomnia last night and didn’t get to sleep until after two a.m. The changing of the clocks played a part, but the larger issue is I’ve started consuming 32 ounces or more of cold brew coffee daily. That’s far too much caffeine. I need to end that nonsense now.

Along with being tired, I’ve been fighting off waves of migraines all day. A couple of Aleve and a nap helped. Upon waking from my nap, I prepped some meals, including enough bean and corn salad to last me the entire week.1 So, that much got done at least. Now the kitchen is in ruins. Yet another thing I need to deal with.

I’m looking forward to a long sleep tonight. I hope to get to bed by nine. Maybe even eight. Can you imagine that?

The salad is made from three cans of pinto beans, an entire bag of frozen corn, one red bell pepper, one green bell pepper, two jalapeño peppers, two small tomatoes, a large red onion, an entire bunch of cilantro, olive oil, apple cider vinegar, the juice from two lemons, honey, maple syrup, and chili powder. It’s pretty good right now but will get even better as the flavors mingle over the next couple of days. ↩
